A little ghee
Red peppers, chopped
Dandelion greens, ?cut up in pieces
Fresh ground black pepper
Saute the vegetables in olive oil in a frying pan. I add a smidgeon of ghee (clarified butter) for flavor. Beat eggs separately with amlittle water and then pour over sautéed cooked veggies. Cook on high heat pulling edges of cooked egg away from sides of pan with spatula so to make sure most of egg gets cooked. Season with salt and pepper. The center of egg will still be a little runny. Turn oven on broil and stick whole frying pan under broiler for no more than 1 or 2 minutes. Keep an eye on it so it doesn’t burn.
Egg will cook through, puff up and brown up a bit.
Serve with a side of fruit or salad.
